100g butter

100g caster sugar

100g SR flour

2 eggs

½ tsp vanilla essence

Cream together the butter and sugar until pale and fluffy.  Sieve in the flour and add the eggs and the vanilla essence, then whisk with an electric hand whisk.

Spoon into 12 cup cases and bake at gas mark 5 for 20 minutes.

Leave to cool before decorating – use melted chocolate or icing made from icing sugar and a few drops of water (and some food colouring if you wish.)  Add fripperies and stuff – you can’t really over do them or make them too twee – that’s the point.
